Barbecued Tuna with Sweet Potato and Green Beans

Many of you told us that in 2018, you are looking to save money and get fitter than ever before.

This meal is a great way to do both at once, even if you suck at cooking. This one is idiot-proof, and comes from our friends at the F45 meal prep challenge.

Barbecued Tuna with Sweet Potato and Green Beans

Serves: 3 [i.e. 3 dinners]


  • 225g tuna fillet (3 x 75)

  • 3 cups raw, sweet potato, chopped

  • 7 cups green beans

  • 1.5 lemon wedge

  • 1.5 tbsp. dried coriander

  • 3 tsp. olive oil

  • Himalayan salt and pepper


  • Preheat oven to 180 degrees and line a baking tray with baking paper. Add the sweet potato to the tray and drizzle one teaspoon of olive oil over the sweet potato. Season with Himalayan salt and pepper. Bake in the oven for 10 mins.

  • Remove the sweet potato from the oven and add the green beams on the tray. Place back in the oven for a further 15 minutes. Divide the sweet potato and green beans into two serves.

  • While the sweet potato and green beans are roasting in the oven, marinate the tuna in a bowl with lemon, coriander, remaining olive oil and pepper.

  • Heat a barbecue grill over medium temperature and cook the tuna fillets for a couple of minutes on each side or until liking.

  • Dish one serving of the barbecued tuna fillet beside one serving of the sweet potato and green beans

  • Refrigerate the second and third serving of the meal for tomorrow's leftovers and the next day
